It is not uncommon for our staff to have many years of experience and to know three generations of residents’ families with warm familiarity. Located conveniently in the heart of Chateau Beaver Creek is the New American restaurant, Splendido. Splendido at The Chateau is a staple for foodies among Vail Valley and beyond. It is a world-class restaurant with a reputation that is only exceeded by the actual experience of dining there.
Chef Brian Ackerman spearheads Splendido with decades of experience. He crafts each dish carefully, with a focus around bringing locally-sourced ingredients to life in unique and surprising ways. To call the meals fresh is an understatement. The staff is known to forage for wild mushrooms, like porcini and chanterelles, much of the produce is grown on local farms, and many of the herbs are grown in the on-site garden or Splendido’s nearby farm. From the food itself to the ambiance with nightly warm fires, dining here is nothing short of magical.
Splendido at the Chateau is the most renowned dining experience in Beaver Creek. Choose the right date and time and you can dine while watching a beautiful fireworks display though the large mountain-facing windows.

The Spa taps into the time-honored rejuvenation traditions known to humans – “sanitas per aquam” or “health through water” – providing a hydrothermal bathing experience in both the men’s and women’s Spas including Finnish-style dry saunas, cold drench bucket showers, hot tubs, and steam rooms where guests benefit from the therapeutic effects of pure eucalyptus essential oil.
